Baby Spinach &
Sweet Potato Purée

Ingredients:

Handful (20g) baby spinach leaves, washed

1 small sweet potato (100g)

(Makes 100 ml of purée)

Gives 2 servings

(Suitable for infants 4-6 months of age)

  1. Wash the sweet potato, peel and cut into pieces
  2. Put the peeled sweet potato in the steamer for 15-20 minutes until soft. Remove from steamer and let it cool down.
  3. Wash the spinach leaves, put into the steamer and steam for 5 minutes.
  4. Remove the steamed spinach from the steamer and put in the food processor together with the sweet potato. (Add 75 ml of purified water if needed.)
  5. Whiz until smooth
  6. Spoon the purée into containers and seal. (Remember to put a label on.)
  7. Can be stored in the freezer for 3 months.
